Mashed Rutabaga!

I am trying to eat more nutritious meals, however I still have cravings for comfort foods like mashed potatoes.  My new solution: mashed rutabagas!  You are probably thinking, ‘what exactly is a rutabaga?’ It is a mix of a turnip and a cabbage- and it looks just like a yellow turnip.  This ‘dream team’ mix offers some amazing health benefits.  Rutabagas are high in fiber, they contain all of the essential dietary minerals, have a ton of vitamin B & C in them, and also contain plant-based chemicals called isothiocyanates which are known to help prevent types of cancer. The best part? When mashed they taste JUST like potatoes. YUM!

I took one large rutabaga along with 3 small redskin potatoes and boiled them for 20 minutes, until they were soft.  Then I mashed them together and added a teaspoon of heavy cream, and a sprinkle of salt.  Lastly I added in 1/4 cup of chives. I mixed the rutabaga with the potatoes because I wanted to ease into the rutabaga flavor- but after this experiment I learned that next time I don’t need to use potatoes at all!

    Yum! What a good idea – def need to try this. I’ve been making mine with cauliflower which is another tasty, really healthy option!
